Such a wonderful day. It started with yoga and meditation in the morning sun with birds chirping all around. It made me feel centered and strong for the rest of the day.
I got a rush of inspiration and had some kind of strawberry chia seed pudding in my mind. I didn't want to put nut milk in it but keep it light and fresh so in the end it turned in to strawberry jam! I still ate it as a pudding with some coconut milk and strawberries on top and it was really delicious. This recipe makes quite a lot so you can store it in a jar and use it like a jam on bread, porridge or in sweet wraps.

- 5 dl Strawberries
- 8 Dates
- Juice from half a lemon
- 1/2 dl goji berries
- 1/4 tsp pure vanilla powder
- 4 dl water
- 1 1/2 dl chia seeds
Mix everything except the chia seeds in a blender. If you like it more sweet, add more dates or preferred sweetener. Pour the mixture over the chia seeds and stir it well. Let sit in the fridge until it has the consistency of pudding or jam.
Serve with some nut milk and fresh fruits or berries.

After breakfast I went to the swampy lands with mom and Pyret for a cloudberry expedition! After many hours of stumbling around in the wet bogs in rubber boots we together got about 700 grams of cloudberries or as we call them here in Sweden - The gold of the forest. How we love these luxurious little berries!
Pyret was terrier-exited (just made that word up) to get far out in the woods, so exited she didn't see the deep muddy hole in the moss.. plopp.. and she was no longer white.

I also got some blueberries while we were out there. I'm gonna have them with my buckwheat porridge tomorrow morning. Maybe some jam with it too! mmm...
