I got a flash of inspiration and ran to my kitchen to make it happen!
It felt like a shot in the dark at first but I was so stoked when i tried the first bite of this delicious dish! You got to try this, it is fast and easy to make.
Here is a link to a deciliter converter if you are using the English measurement system
- 1 Small zucchini
- 1 dl Orange juice
- 2 tbs Applecider vinegar (or a little less if you don't like it too tangy)
- 2 tbs Nama Shoyu or your preferred soy sauce.
- 1 tbs Lemon juice
- 3 Pieces of sundried tomatoes (in oil or soaked)
- 1/2 Avocado
Mix all the ingredients except the avocado in a blender until smooth.
Add the avocado and blend until smooth again. Don't blend for too long, it will make it fluffy.
Make zucchini pasta by spiralizing zucchini. If you don't have a spiralizer you can use a potato peeler to make tagliatelle style pasta- it is just as tasty :)
Put the zucchini and the sauce in a bowl and mix well.
Serve with arugula!
